Double Boiled Coconut and Chicken Soup

Using just two simple ingredients - coconut and chicken - is enough to create a pleasantly sweet and savory blend of health broth for all to enjoy. One bowl of Double Boiled Coconut and Chicken soup will replenish your body with good nutrients such as Vitamin K and B2.

Double Boiled Coconut and Chicken Soup


  • 1 nos Whole Chicken
  • 1kg Whole Chicken (chop into bite size pieces)
  • 10 nos Coconut
  • 50g Dried Snow Fungus (also known as Silver Ear Fungus)
  • 30g Ginger
  • 50g Salt


  1. Rinse Dried Snow Fungus, soak in water for 3 hours then remove, drain and cut into small pieces with a pair of kitchen scissors.
  2. Place one coconut on a clean cloth and pierce two soft spots on the coconut with long metal nails. Hammer the nails till they reach the meat and then remove them. Overturn the coconut and drain the juice in a bowl. Once done, separate the meat from the shell with a knife and strain the coconut juice for later use.
  3. Rinse the ginger, remove skin and slice thinly.
  4. Next, remove remaining feathers on the chicken with a tweezer. Rinse the chicken and discard its innards and fat. Drain and set aside.
  5. Fill the ingredients into the coconut and steam for 4 hours. Serve hot.
